Meaty experiments -- pancetta

OH has activated his "Curing and Smoking" book and has been to the local  butcher's. He has got himself a three-pound pork belly, has done a little magic with it, and it is now resting in a ziploc bag in a tray in the fridge, the salt quietly pulling the water out of it. It should come out in the first week of February. The name of the beast: pancetta.
