Evening meal with
yesterday's chicken, spuds, corn on the cob
Made broccoli lasagna:
used up the flowered broccoli here. Tastewise absolutely fine but the
texture is really stringy so won't use again for quiches. Should be
good for veg stock though.
Baked 12 carrot muffins
using Jamie Oliver's recipe – very nice! Left out the walnuts as I
had none available but it didn't matter. The cinnamon worked very
well. Bit oily though. Maybe because of the granulated sugar instead
of caster? Will try to use less oil. P from next door absolutely
loved them though. If I pass baked stuff over the garden fence, he'll
eat it.
Later made 4 pots of
raspberry jam with the new 8.5ltr stainless-steel Maslin pot. Totally
going back to my country roots here. Both my great-grandparents had
allotments and kept ancient jars full of bottled fruit on their
cellar shelves.
