Leftover allotment
produce needs using up so I grated up 3 or 4 small courgettes plus 3
handfuls of potatoes, grated an old roll and some elderly cheddar
into it, chopped up one of the onions from the allotment, mixed this
with 3 eggs and seasoned it with pepper and a little salt. Fried this
up into patties, called Reibekuchen, Reiberdatschi or Roeschti on
the continent. Pat with kitchen roll to soak up excess grease. Served it
with half fat crème fraiche mixed with some dried dill that needed
using up plus some smoked salmon for protein, sprinkled with lemon or
lime juice, depending on what's in the citrus fruit basket. Can't
beat it. My signature dish of this decade.
