Been waiting for a sunny morning for a long time, and here it is. OH has cleaned and sterilised a big bucket, and we'll be going into the back garden in a minute and harvest some elderflowers for our first attempt at making elderflower champagne.

Mr Tubby tried to get into the elderflower basket. In hot weather, he wants to be carried everywhere.
And this is the brew:
OH is trying a variation of an Andy Hamilton recipe. We upped the elderflower count from 6 to 12 but reduced the number of lemons (we only had 3 in the house). Into the bucket also go water, sugar, cider vinegar and champagne yeast. The lid goes on and the bucket into the pantry for anything between one to four days. Once it starts to ferment, it needs to be bottled so it will be a very weak "champagne", more like the kind of spritzer you'd make out of dry white wine, sparkling water and a shot of elderflower cordial.
Depending on the weather, I might go out this week and harvest some more elderflower to make elderflower syrup.
